🧄🧀 Garlic Parmesan Pork Chops with Cheesy Scalloped Potatoes
Ingredients:
For the Pork Chops:
-4 bone-in or boneless pork chops (1 inch thick)
- tsp garlic powder
-1/2 tsp onion powder
-1/2 tsp paprika
-Salt and pepper to taste
-1/2 cup grated Parmesan cheese
-2 tbsp olive oil or melted butter
For the Cheesy Scalloped Potatoes:
-3–4 medium Yukon gold or russet potatoes, thinly sliced
-2 tbsp butter
-2 garlic cloves, minced
-2 tbsp all-purpose flour
-1 1/2 cups milk (or half and half)
-1 cup shredded cheddar cheese
-1/4 cup Parmesan cheese
-Salt and pepper to taste
-Fresh thyme or parsley for garnish (optional)
Instructions:
1.Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
2.Prep pork chops: Pat dry, season with garlic powder, onion powder, paprika, salt, and pepper. Press Parmesan onto both sides.
3.Sear chops (optional): For extra flavor, quickly sear pork chops in a hot pan with oil for 1–2 minutes per side.
4.Make the cheese sauce:
1)In a saucepan, melt butter and sauté garlic for 30 seconds.
2)Stir in flour and cook for 1 minute.
3)Slowly whisk in milk and cook until thickened.
4)Add cheddar, Parmesan, salt, and pepper. Stir until smooth.
5.Assemble dish:
1)Layer sliced potatoes in the baking dish.
2)Pour cheese sauce evenly over the potatoes.
3)Place seasoned pork chops on top.
6.Bake covered with foil for 40 minutes.
7.Uncover and bake another 15–20 minutes, or until pork is cooked through (145°F) and potatoes are tender and golden.
8.Rest & garnish: Let rest for 5 minutes, then sprinkle with parsley or thyme
